Functional Properties and Maillard Reaction Product Formation in Rye-Buckwheat Ginger Cakes Enhanced with Rutin

A study of functional properties and Maillard reaction progress in rye-buckwheat ginger cakes supplemented with low and high rutin amount was conducted. The cakes were formulated on rye flour substituted by flour from husked buckwheat or flour from roasted buckwheat groats at 30 % level. The dough was either spontaneously fermented for 72 h at 21 °C, or the fermentation step was omitted. The cakes were baked at 180 °C for 18 min. Fortification of rye-buckwheat ginger cakes by low and high level of rutin was associated with the beneficial progress of the Maillard reaction towards the formation of melanoidins, while furosine formation at the early stage of Maillard reaction was decreased. However, loss of the nutritional value due to the formation of high amount of fluorescent (carboxymethyllysine (CML)) and fluorescent-intermediate compounds was observed. It has also been proved that rye-buckwheat ginger cakes fortified with low and high rutin doses are a rich source of biologically active compounds. Therefore, the cakes showed a high ability to inhibit the formation of advanced glycation end products (AGEs) in vitro and revealed high antioxidant potential. These findings may be important factors in complete evaluation of functional properties of ginger cakes. Stronger influence of rutin enrichment was observed in cakes baked from fermented-like dough than without this process

Multiple renal abscesses leading to nephrectomy of the solitary kidney in a young female with type 1 diabetes and history of recurrent urinary tract infections

This report presents the case of a young female suffered for many years from type 1 diabetes, complicated by recurrent urinary tract infections and urosepsis with multiple abscesses which led to right nephrectomy in 2002. The patient was hospitalised in our Department in June 2009 because of urosepsis in the course of multiple left renal abscesses and subsequent acute renal failure requiring hemodialysis. A dramatic decision of removing the solitary kidney was taken, and patient was included in a long-term renal replacement therapy programme in our Centre as a preparation to kidney and pancreas transplantation

Antioxidant Properties of Dark Wheat Bread with Exogenous Addition of Buckwheat Flour

In this study, the antioxidative/reducing activity of buckwheat-enhanced dark wheat breads (BEDWBs), based on the substitution of dark wheat flour (DWF) with buckwheat flour (BF) or flour from roasted buckwheat groats (BFR) at levels of 10, 20, 30 and 50% (w/w), was investigated. The antioxidative activity was measured against the 2,2’-azinobis-(3-ethylbenzothiazoline-6-sulfonate) radical cation (ABTS•+), the 2,2-diphenyl-1-picrylhydrazyl radical (DPPH•) and the superoxide anion radical (O2−•) by photochemiluminescence (PCL), reducing power by Fe(III) reduction and directly by cyclic voltammetry (CV) technique. The Fe(II) chelating capacity was also provided. The substitution of dark wheat bread with white and roasted buckwheat flour up to 50% (w/w) resulted in higher scavenging capacity against free radicals. The chelating and reducing power were above threefold higher as compared to a reference dark wheat bread. The improved antioxidant properties of buckwheat-enhanced dark wheat breads were due to the incorporation of buckwheat flour polyphenols. The high correlation noted between the total phenolic content and antioxidant capacity suggested that these assays may be used to characterize the cereal products enriched by buckwheat flours. Overall, buckwheat-enhanced dark wheat bread could be applied as food with more efficient antioxidant properties

Bladder Pain Syndrome – an urological-gynecological problem

Summary Bladder Pain Syndrome remains a great challenge for urologists, both in diagnostics and treatment. Etiopathogenesis of the disease is unknown. It is reported that the reason for Bladder Pain Syndrome is the urothelium dysfunction resulting in the destruction of the protective glycosaminoglycan layer /barrier protecting the urothelium from bacteria adhesion and penetration of toxic substances/ by bacteria. It is considered to be a syndrome of dysuria and diuresis. Urine analysis usually is normal. It is diagnosed after exclusion of other causes leading to painful symptoms. It is estimated that 90% of the cases of the disease concern women. Treatment with glycocorticosteroids, antihistaminic drugs and antiallergic drugs was not successful. The attempts to find the right method of treatment led to the introduction of hyaluronic acid, which alleviated Bladder Pain Syndrome and its symptoms. Hyaluronic acid reacting with glycosaminoglycans on the bladder decreases penetrability of irritant substances. The patients were treated with 4-8 weekly instillations – 40mg of hyaluronic acid in 50ml NaCl solution for 1-2 months. After the last instillation, therapy is repeated for the next 6-8 months with one instillation monthly. This method is for patients a chance for getting rid of painful symptoms from the bladder

Sexual behaviours assessment in flight personnel

Wstęp. Ocena zachowań seksualnych oraz stopnia zaburzeń potencji należy do ważnych elementów badania podmiotowego w każdym badaniu urologicznym mężczyzny. Materiał i metody. W latach 1997–2000 w Wojskowym Instytucie Medycyny Lotniczej w Warszawie, w ramach corocznych badań profilaktycznych personelu lotniczego, wojskowego i cywilnego, po uprzednim uzyskaniu zgody, przeprowadzono ankietę, wykorzystując kwestionariusze Sex score oraz International Index of Erectile Function 5 (IIEF-5). Za pomocą ankiety oceniono również potrzebę takich badań we wspomnianej grupie zawodowej. Ocena zachowań seksualnych objęła 979 osób. Wyniki i wnioski. W ocenie zachowań seksualnych u 471 badanych (48,1%) uzyskano wyniki w przedziale 11–16 punktów, zaś u 463 osób (47,3%) — w przedziale 17–20 punktów. W ocenie zaburzeń potencji u 682 badanych rezultaty były następujące: u 476 osób (69,7%) suma punktów mieściła się w przedziale 17–22, a u 159 osób wynosiła 23–25 punktów; 95% pacjentów uznało, że badanie jest potrzebne. W badanej grupie personelu lotniczego zaburzenia funkcji seksualnych oraz potencji są umiarkowane.Introduction. The survey was carried out at the Air Force Medicine Institute from 1997 to 2000 as a part of prophylactic medical examinations for the civilian and military flying staff using Sex Score and International Index of Erectile Function 5 (IIEF-5) questionnaires. The need for such examination profile was also assesed. The group of 979 individuals was examined; all participents gave their informed consent for data collection. Results and conclusions. 471 patients (48.1%) scored 11-16 points, 463 individuals (47.3%) - 17?20 points. The potency assessment in 682 examined individuals revealed that 476 of them (69.7%) scored 17-22, and 159 ones - scored 23?25 points. Tumour in the ureter stump 13 years after nephrectomy – a rare case of endometriosis

Abstract Endometriosis is found in the urinary tract in 1-2 % of women suffering from this disease. The most common site is urinary bladder (81%). In the ureter it is found in only 15% of cases and it mainly involves the pelvic part. The authors present a case of 49-year old woman who was diagnosed with an endometriotic tumour in the stump of the ureter, 13 years after left nephrectomy performed for hydronephrosis and lack of the kidney’s function confirmed in renal scintigraphy. After laser ablation and hormonal therapy the tumour burden was diminished and symptoms resolved
